Weekend Baking

So I set out to bake all day Saturday. I did get most of it done, but I just couldn't stand in the kitchen anymore. So here is what I (with some help from my wonderful husband) accomplished this weekend. I like to use recipes as the base and then add or take away what I like and dislike, so I tweeked a few of these to fit our family.






  • Double batch (approx 60) of Pumpkin Chocolate Chip Muffins (some of these were mini's for my little one)



  • 1 Pan of Lasagna


  • A batch of Waffles (I added some dried cherries and flax seed to mine and I used regular white flour, which is all I had on hand)



  • Double batch of Chicken Tetrazzini (added some mushrooms to this)




  • 2 Pans of Chicken Enchiladas

  • Double batch of Cheeseburger Soup (this is the best recipe out there!) (I used green peppers and banana peppers from our garden and then added the rest of the mushrooms instead of celery)

  • We also made a batch of Halloween sugar cookies.
